Jaanihanso cider is the first genuinely Estonian cider made from Estonian apples. The juice from traditional local juicing apples is pressed on the spot in late autumn when they are ripe; apples are primarily picked in old orchards of Pärnu County, Viljandi County and Tartu County.
Jaanihanso does not boil, filter or carbonise its ciders. Cider matures and clears up in bottles in the same way as the best champagne. Fine and intensive bubbles appear in the bottle by themselves in the process of natural fermentation. After months of maturation in bottles, residue is removed from bottles by means of freezing the bottle necks.
Each bottle of Jaanihanso cider has been handcrafted as a result of the production process that takes almost a year. This is what cider is actually supposed to be!
